  1. 1. In a frying pan on medium heat add olive oil sauté shallots until golden brown.

2. Add 2 cubes of butter, salt and pepper then mushrooms, reduced heat and cook until mushrooms are caramelized.

3 Add a cube of butter and white win or stock, season to your liking.

4. Finish with shaved Parmesan and fresh sage
